Healthy Meal Recipes You Should Try 

Eating healthy may sound like a chore for some of us, but I promise it is not as bad as it sounds. When it comes to eating healthy, I believe that it is important to choose the least resistant path. This means finding recipes that are easy to make without compromising taste. Here are two of my favorite recipes I love to cook especially when I have a busy schedule. 

  1. Air Fried Plantain and Eggs:

Ingredients: Ripe Plantain, 2 eggs, your choice of meat, tomatoes, onions, and spinach 

  1. Dice your plantains by cutting it horizontally and diagonally. 
  2. Season with a pinch of salt 
  3. You can pit it your air fryer for 15 mins at 400 degrees. Or you can simply fry it in a pan of light oil. 

Time to make your eggs

  1. Wisk 2 eggs with a little bit of salt, black pepper, and slap yo mama seasoning
  2. Dice your onions and tomatoes 
  3. Heat up frying pan 
  4. Sautee your onions, tomatoes, and choice of meat in the pan
  5. Finally add egg and cook on both sides.
  6. Serve with a side of spinach and tomato salad
  1. Coconut Rice and Air fried Chicken 

Ingredients: Rice, Coconut Milk, Chicken Thigh, Carrots, Yellow Onions, Green Onions, Spinach and Tomatoes

  1. Season/Marinate your chicken using salt, curry, thyme, rosemary, cayenne pepper, garlic and onions. 
  2. Place marinated/seasoned chicken in the pot with a cup of water and bring to a boil until nice and cooked.
  3. Brown chicken in the Air fryer or oven for about 8-10 mins. 

Cooking the rice:

  1. Add a little pit of oil to a pot and Sautee your onions, carrots and tomatoes. 
  2. Add coconut milk and season to your satisfaction. 
  3. Add chicken broth from the cooked chicken. 
  4. Add your rice and season. 
  5. Serve with a side of spinach and tomato salad

The two recipes are sure to keep your taste buds happy. A tip I use is making sure you add your own unique twist to your dish. Eating healthy does not have to be boring. You can make delicious meals that are great for your taste buds and soul. Bon Appetit!
