Five Tasty Brunch Recipes That Save Time

Spending time with amazing friends and family on weekends is a form of self care no one talks about. It is no news that after a fun-filled day with wonderful friends, there is this great feeling that comes with it. Always, you would leave there leaving refreshed and energetic for the new week. Hence, it is important that you prioritize quality time with friends. 

An easy way to be intentional about making time for friends is by scheduling brunch dates regularly. Brunch dates are dates where couple of friends come together to catch up and relax.  It could either be in a restaurant or at home. The choice is yours. But if you are trying to cut cost, I would suggest preparing everything at home. 

Want to ditch going out and try out a do-it-yourself brunch date? Here are delicious and quick recipes you should try out:

  1. Hash Brown Egg Casserole 

Ingredients: Olive oil, breakfast sausage, garlic (minced), onions (minced), bell peppers, eggs, parsley, dried basil, dried pepper, frozen shredded hash browns (thawed), cheddar cheese (optional).

1 . Preheat the oven to 400 degrees, heat olive oil in a pan.

2. Brown your sausage for about 10 minutes.

3. Add in onions, garlic, and pepper and sauté for an extra 5 minutes.

4. Allow veggies and sausage to cook. 

5. While they are cooking, whisk together eggs and dried spices.

6. Then pour egg/spice mixture, cooked sausage & veggies, thawed hash browns and cheddar cheese into a large bowl and mix together.

7. When done mixing, pour everything into a greased ceramic baking dish.

8. Bake for 25-30 minutes at 400 degrees. 

9. Serve.

  1. Avocado and Black Bean Eggs 

Ingredients: Rapeseed oil, chili (deseeded and thinly sliced), garlic (sliced), eggs, canned black beans, cherry tomatoes, cumin seeds, avocado (sliced), coriander (fresh and chopped), lime.

1. Heat the oil in a large non-stick frying pan.

2. Pour chili and garlic into the pan and cook until softened and starting to color. 

3. Break eggs into the mixture.

4. Once they start to set, spoon beans and tomatoes over the pan ( the aim is to warm the beans and tomatoes rather than cook them).

5. Once ready, remove the pan from the heat and scatter its contents over the avocado and coriander. 

6. Squeeze the lime wedges over the mixture. 

7. Serve with the remaining wedges on the side for squeezing.

  1. Dark Chocolate Avocado Mousse with Coconut Caramelized Banana

Ingredients 

Mouse: Ripe avocados (peeled and pitted), dark chocolate (melted and cooled), dark cocoa powder, honey, vanilla extract, salt, instant coffee, canned coconut milk.

Coconut caramelized banana: ripe banana, coconut oil, brown sugar, coconut rum, vanilla extract, sweetened coconut.

1. Microwave chocolate in a microwave safe bowl with 30 second intervals until melted and smooth.

2. Set aside to cool. 

3. Pour avocados, melted chocolate, dark cocoa powder, honey and salt to the bowl. Grind everything together to make a fine powder.

4. Add instant coffee powder to the bowl and blend until smooth and creamy, 

5. Add coconut milk and blend again until smooth and creamy. 

6. Spoon into glasses and refrigerate for at least 1 hour.

7. When ready to serve the mousse, melt coconut oil in a skillet. Then, add sliced bananas and brown sugar. 

8. Cook for 2 minutes until browned.

9. Add the coconut liqueur and vanilla. 

10. Simmer for 1 minute. Next, remove the tray from the heat and put the warm bananas over the mousse. 

11. Sprinkle with toasted coconut and serve.

  1. Greek Chicken Orzo Salad 

Ingredients: Extra virgin olive oil, red wine vinegar, lemon juice, honey, Dijon mustard, shallot (chopped), herbs (basil, oregano, and/or thyme), kosher salt, black pepper.

Salad: chicken tender, basil pesto, balsamic vinegar, dry orzo, feta cheese (cubed), cherry tomatoes, Persian cucumbers (chopped), kalamata olives, bell peppers, pepperoncini (sliced).

1. Mix all salad ingredients in a large salad bowl to make the dressing.

2. Toss the chicken and pesto and balsamic vinegar together.

3. Set your skillet to medium-high heat and grill the chicken until cooked.  

4. Boil a large pot of salted water. Then, boil pasta to al dente. After that, drain it. 

5. Pour the hot orzo into salad bowl, full of dressing and toss.

6. Add the chicken, feta, tomatoes, cucumbers, olives, peppers, and pepperoncini. 

7. Serve warm or cold.

  1. Easy Chipotle Salmon Burgers

Ingredients: Salmon (cooked), Panko breadcrumbs, eggs, chipotle in adobo (chopped), soy sauce, honey, garlic powder, chili powder, kosher salt and black pepper, cilantro (chopped), cheese slices, olive oil, burger buns, lettuce, avocado.

Chipotle mayo: Mayo, chipotle in adobo, honey

1. For the burgers, mix salmon, Panko, eggs, chipotle in adobo, tamari, honey, garlic powder, chili powder, salt, pepper, and herbs in a bowl.

2. Heat oil in a large skillet and fry the burgers for 3-5 minutes until crispy. 

3. Add a cheese slice to each burger and cook until melted. 

4. To make mayo, combine all ingredients in a bowl.

5. Then for assembling, layer toasted buns with chipotle mayo, cheesy burgers, lettuce, avocado, and herbs. 

6. Add the top bun and enjoy.
